Refill Sherry Butt/ Code: EDI0221/ Dist: Jan 1992 Btl: 2017/ Tasted: Mar 2017

A dense and quite malty nose with baked fruit, dark honey, milk chocolate and subtle herbal-barley. The aromas display a lovely, elegant, Cognac-esque rancio and reek of age. Late hints of straw, old wood spice, vanilla, alcohol seeped apricot and tangerine.

The palate is mature and straw-like with delicate barley and refreshing citrus notes. Cognac-esque notes of apple and apricot come though on the middle. Excellent depth and complexity. Long, subtly spiced and sweet vanilla finish with lingering barley, minerals, malt, coffee, liquorice and almost grainy dried fruit.

North Star Spirits Tormore 1988 (27 year old) 51.5%

Bourbon Hogshead/ Madeira

Dist: 1988 Btl: 2016/ Tasted: Nov 2016

Deep and heavier on the Madiera notes than the Arran. Slightly herbal with hints of mature, baked fruit and drier, nuttier Madeira. It becomes very herbal and nutty with time and hints of dunnage and cayenne pepper appear.

The palate is subtle and deep with again the mellow, dry nutty Madeira taking centre stage. Lightly chocolaty with crisp, mineral notes and oily apricot and Satsuma on the middle. Long and remaining biscuity with a pleasant dry, toasted toffee finish. Although pleasant the Madeira finish is a little too heavy.

Tormore 1995 (19 year old) 49.1%

Bourbon Hogshead 20315/Tasted: Mar 2016

Nose: Mature and woody with cinnamon and pepper notes mingling with chunky, herbal barley and a touch of baked fruit. With time it becomes quite malty with developing marzipan oak.

Palate: Soft and showing a little more toffee’d oak along with baked apple and hints of coffee, malt sand vanilla. Lovely depth and maturity.

Finish: Long and juicy with a pleasant, mouth-watering flourish. The oak bitters a little at the death.

Conclusion: A lovely mature Spey showing plenty of baked fruit character.

Bourbon/ Sherry Finish

Code: OMC2478/ Dist: Nov 1988 Btl: May 2015/ Tasted: Jun 2015

Quite malty for a Tormore with hints of treacle, herbs and dried sherried fruit. Good maturity with some oxidised dried fruit joining the light sherry.

Soft, and sweetly spiced on the palate with Armagnac-esque dried fruit and walnuts. Like the nose it is quite malty and rich with a pleasant grassy, herbal and spicy finish. Again pleasantly mature.

Beautiful aromas of luscious dried prune and apricot, liberally coated in syrup. Deep, aromatic, dusty oak vanillins and barley follows along with juicy date, fig and almost tropical melon. The sherry notes are very subtle and slightly herbal, but they add a subtle, but intense peppery spiciness.

Lovely weight to the palate with dried plum, prune, apricot and raisin. Extremely juicy and elegant with layers of subtle sherry character and hints of liquorice, almond and walnut. Lovely vibrancy with gentle spice and a touch of dark chocolate. Long and remaining juicy with lingering dried fruit and loads of sweet tobacco smoke, cocoa powder and treacle. Ooooh, that’s seriously smoky now!

Sherry Butt/ OMC2622/ Dist: Oct 1988 Btl: 2017/ Tasted: Mar 2017

Lovely aromas of burnt rubber, burnt toast and sulphur! (Obviously I was being factious!)

Rough and murky with bitter oak, citrus and wet cereal. A touch of vanilla attempts to lighten but fails miserably. Shot, hot and acerbic with lingering decaying rose petals. It’s dead Jim!

Sherry/ Code: OMC2646/ Dist: Nov 1988 Btl: 2017/ Tasted: May 2017

Malt biscuits and toasted cereal on the nose with hard barley, baked fruit and herbal rye-like notes along with some oily, old marc-like notes. To be honest it feels like the spirit is creaking.

The palate is very much like the nose. Malt biscuits, decaying, old rose petal marc and hints of sugar water. I’m afraid that this is old and knackered. Short, slightly mineral with a green fruit finish and finally a little honey. The finish is its best feature!

Sherry Butt/ Code: OMC2737/ HL14481

Dist: Nov 1988 Btl: Nov 2017/ Tasted: Feb 2018

A dense nose but quite light and elegant with dark honey, treacle and Armagnac-esque dried fruit. Hints of warm vanilla, cinnamon and nutmeg appear, along with dark chocolate, coffee and some ascetic/ citric notes.

The palate displays a good richness of sweet, riaisnated fruit with hints of treacle and tar. Light citrus and mineral notes freshen the middle but the finish is quite woody and tannic with a very slight bitterness. Good length though with lingering treacle and caramelised orange.

Dewar Rattray Tormore 1995 (18 year old) 49.8%

Refill Sherry(?) cask 20092/ Dist: 1995 Btl: 2014/ Tasted: Jan 2014

A lovely nose if dense barley and a touch of refill sherry richness. Hints of garden peas, lime, apricot and butter vanillins. With time the butteriness develops and becomes quite toffee’d – butter toffee and shortbread.

The palate is luscious and creamy. Light straw-like white fruit with hints of violets and rose petals. Lightly oaked but the tannins and alcohol dries, but the toffee holds. It finishes with a crisp fresh, herbal note as the spirit finally casts off the oak.

A drop of water emphasises the oils on the nose, but makes the palate a little watery, but it dies bring out the dusty/ earthy spices.

Douglas Laing Old Malt Cask Tormore 1994 (17 year old) 50%

Bourbon/ Code: OMC2203/ Dist: 1994 Btl: Nov 2012/ Tasted: Nov 2012

The nose displays plenty of sweet, creamy oak, citrus and grass along with a slight alcohol prickle. Quite fruity and fleshy with apricot, banana and a light sweet spice note.

The palate is very much like the nose, opening with the soft, creamy oak which come bundling in trailing a distinct butterscotch character. Slightly fleshy with a touch of apricot. Good length with hints of grass and white chocolate. Quite charming with a slightly toffee’d after-taste.

Mackillop’s Choice Tormore 1990 (22 year old) 52%

Bourbon Cask 18763/ Dist: 1990 Btl: March 2012/ Tasted: Aug 2012

A slightly high toned and spirity nose, but some castor sugar coated apricot and tangerine comes to the rescue. Some very buttery oak comes through with time along with a touch of thick honey and caramel.

Quite dry and alcoholic on the palate but pleasantly fruity with fleshy apricot, nuts and caramel, but the alcohol really intrudes. Some creamy/buttery oak appears on the finish.

With water the nose opens up to display a depth of soft orange, tangerine and Satsuma, augmented by some lovely crumbly spice. Very deep and full now that the alcohol has been tamed. The palate mirrors the nose. Very orangey and soft with some lovely, sugared moments. Lovely length with a hint of spice on the finish. A very impressive bottling of Tormore!

Bourbon Cask 4176/ Dist: Apr 1988 Btl: Jan 2015/ Tasted: Apr 2015

A beautifully light and elegant nose. Surprisingly still a little gristy with buckets of luscious honey coated barley and sweet-ish sub-tropical fruit. Lightly herbal with a touch of buttery/ creamy oak. Wonderfully fragrant and evocative!

The palate is soft, full and gorgeously honeyed with hints of barley, apricot and juicy fruit. Lightly mineral and herbal on the middle which balances the fruit and honey. Long and succulent with a dry, lightly coffee’d fade. Another stunning cask of Tormore.

Quite a complex nose. A lovely mixture of creamy bourbon oak, spicy, rich apricot/ orange fruit and subtle spicy red wine notes. Intense, spicy and tangy on the palate. Very fruity with a good length and subtle port notes.

Refill Sherry Hogshead/ Dist: June 1996 Btl: June 2007/ Tasted: June 2011

A soft and fragrant nose of light satsuma and plenty of spicy oak. With time the oak becomes very creamy and buttery with only a very subtle degree of sherry.

The palate is soft and reasonably fruity with a touch of honey and a pleasant sugar coating. A bit short and hot with a hint of spice in the finish.

Douglas McGibbon Provenance Tormore 1999 (11 year old) 46%

Bourbon/ Code: PRV0686/ Dist: 1999 Btl: Sept 2011/Tasted: Sept 2011

Another high toned nose, but the aromas are rather murky and a touch industrial. Yes there are some floral and honey notes but they fail to really escape the murkiness. The palate is young and unsurprisingly a tad industrial with latent honey, cereal overlaid by some toffee’d oak. Quite peppery on the middle with a tartly citrus and alcoholic finish.
