Bourbon

Code: PRV0752/ Dist Sept 1998 Btl: Nov 2011/ Tasted: Nov 2011

A very youthful nose, displaying an almost Sauvignon Blanc character with ash, coal dust, peat and creosote with a slightly briny twist.

The palate displays a good depth of youthfully sweet cereal and gentle peat. Not quite as ‘feisty’ as the nose but it does have an edge when the citrus and Sauvignon Blanc notes kick in. A good, lingering, peaty finish with a tarry, creosote aftertaste. Very fresh and Invigorating.

A young and slightly cerealy nose. Quite fresh and grassy with a moderate degree of peat. Quite pungent with a lovely citric freshness.

The palate opens with the youthful cereal but there’s a depth of oily, sweet barley and fruit with a touch of castor sugar. Quite grassy and fresh with a light dusty peat middle. The peat dusty lingers along with hints of tar, smoke, camphor and honey. Young, feisty (possibly) but quite appealing.

Bourbon/ Code: PRV1076/ Btl: Jan 14/ Tasted: Feb 14

Very oily aromas of oily cereal, oily toasted caramel along with a little salt and peat. The peat develops a dusty demeanour as a light herbal note appears. Quite full and definitely ‘modern’ Coal Ila.

The palate is, er, surprise….. Oily! Pretty young with latent white fruit and barley. Hints of salt and herbs come through on the middle. The middle is a little hollow to be honest, but the finish is lovely. Intensely salty with a sort of fleshy ‘agave’ note and a dusty/ oily peat after-taste.

Bourbon/ Code: PRV1108/ Dist: Mar 2006 Btl: Feb 2015/ Tasted: Mar 2015

A very oily and oaky nose with hints of tarred peat and soot. Lightly salted with developing freshening citrus and white fruit.

The palate displays a greater degree of ‘off the still’ oiliness, along with phenolic peat, sweet peat and tar. A light buscuity note comes through on the middle plus hints of barley and salt. Lovely salty/oily finish with a touch of vanilla and white fruit. Sooty after-taste.

Refill Bourbon Hogshead/ Code: PRV1173/ DL11073

Dist: Dec 2010 Btl: Mar 2016/ Tasted: Apr 2016

Very briny and fresh aromas with balancing beautifully sweet barley, white liquorice, manure, tar, rubber and slightly medicinal peat. With time a slightly perfumed top note appears.

The palate is a little oilier than the nose suggests with some oak notes. Still fairly sweetly barley’d with white fruit, tar, dry, earthy peat and salt. Long and crisp with lingering salty coastal notes and barley.

Douglas McGibbon Provenance Caol Ila 2001 (10 year old) 46%

Bourbon/ Code: PRV0711/ Dist: Jan 2001 Btl: Aug 2011/ Tasted: Aug 2011

A lovely nose of high toned white fruits and phenolic briny, seaweedy notes, underpinned by a good barley sweetness and unassuming oak. With time a hint of perfume appears. A lovely, fresh Caol Ila! The palate is a touch on the sweeter side and slightly gristy to begin with. Gentle, spicy peat and perfumed white flowers leads into a fresh spicy, tarry and sooty finish.
